Yeast-Free Staff Potluck Lunch

With the “Yeast-Free with Me” team spirit in mind, our office decided to throw a yeast-free staff potluck lunch, as a way to share recipes and tips, as well as encourage one another along the way during the 30-day challenge. Each staff member was asked to bring their favorite yeast-free dish or snack for everyone to enjoy, including a detailed recipe card with instructions. This was a great team building activity, not to mention a good time and a healthy meal. It was such a hit; we are doing it again next week! Also, read on below to see who won the Giveaway…
 , Recipe by Nickie Nye, Ingredients:
1 can chickpeas rinsed well
1 can red kidney beans rinsed well
1 can crushed tomatoes
½ cup chopped onions
½ cup chopped green pepper
1 lb. extra lean ground turkey
4 tbsp. chili powder
2 cloves minced garlic
 
Directions:
1.Combine all of the ingredients in a pot.
2.Place the pot on the stove and bring it to a boil.
3.Once it is boiling, turn the stove down to low and let simmer for 2 hours.
4.You can also make this recipe in a crockpot.
 
 
Recipe by Lindsy Price, Ingredients:
2 (32-ounce) box low sodium organic chicken broth, divided
1 (14-ounce) package organic chicken sausage (sliced and any flavor)
1 large yellow onion (thinly sliced)
Salt
Ground black pepper
7 cups cooked white beans (divided) – cannellini, navy or great northern
1 bunch organic kale, stems and tough ribs removed, and leaves roughly chopped
 
Directions:
1.Heat ¼ cup broth in a large pot over medium heat.
2.Add sausage slices and cook for about 10 minutes, stirring occasionally until liquid has evaporated and sausage is browned.
3.Add onions, salt and pepper – cook for additional 10 minutes, stirring often until softened. (Add a generous splash of broth to the pot if onions begin to stick).
4.Put 3 cups beans and 2 cups broth into a blender and purée until smooth – set aside.
5.Add remaining broth to sausage mixture in pot and bring to a boil, scraping up any browned bits.
6.Add kale, reduce heat, cover and let simmer, while stirring occasionally until wilted and softened (about 5 minutes).
7.Uncover, add remaining 4 cups beans, bean puree, salt and pepper, and let simmer until hot throughout (about 5 additional minutes).
