Stacey: Welcome to Dr. Hotze’s Wellness Revolution, I’m Stacey Bandfield, here with Dr. Steven Hotze, founder of the Hotze Health & Wellness Center, we have got a great show today. Everyone is fascinated about health. How can they be their healthiest, and this is all about the gut – what you’re putting into yourself. We’ve got a fascinating guest, Barry Fourie. He is the founder of Healthy Gourmet and he’s going to talk to us all about the right way to eat.
Dr. Hotze: Thank you, Stacey. Hello, I’m Dr. Steve Hotze. Today we’re going to visit about a yeast-free eating program, which is basically the old Adkins diet, or what is known as a ketogenic eating program. And I have as our guest today, Barry Fourie with Healthy Gourmet for you, and they make and prepare food in advance that you can order which is frozen, and if you start on a yeast-free eating program, they can provide you with the food. So Barry, welcome, glad to have you here today.
Barry Fourie: Thank you so much for having me on.
Dr. Hotze: Well Barry, tell us about Healthy Gourmet Your Way and tell me how you got started in the food industry.
Barry Fourie: Healthy Gourmet Your Way, we started about a year ago and I’ve been in the food industry for the last 10 years on different capacities, all the way from starting a food truck, to manufacturing cooking sauces, to starting a quick-serve restaurant, and now we’ve really progressed into more of the packaged meals, so getting into the healthy prepared meals.
But what makes us a little bit different is that we’ve got more customization that’s available within our menu, so that’s where the Your Way comes from. A lot of it is focused on macronutrients, like you had mentioned if you’re looking for more of a ketogenic, or low carb solution, there’s different menu items that you can select, and you get the carbs on the side so you can pick just to have the dish as is, or you can choose from brown rice, quinoa, or otherwise spaghetti squash, veggie noodles, and we make everything from scratch each week and just using whole ingredients.
It’s been my favorite project to date for sure, and I feel that it’s more cooking with a purpose and…
Dr. Hotze: Now you’re located here right in the Houston area?
Barry Fourie: Yeah, so we are located currently on Highway 6 and I-10 but we are growing and moving our facility to the North side of Houston, but yeah, we’re Houston-based.
Dr. Hotze: Well, tell us about your ingredients. Where do you purchase your ingredients? Are they natural? Do you have a lot of chemical additives? Tell us about that.
Barry Fourie: Basically, our philosophy is that everything is all-natural, whole ingredients. We do use quite a few organic ingredients, but we’re not across the board organic. We use better proteins so we use no-antibiotic-ever chicken. Just good practices farming with beef.
But I think what really helps us control our ingredient list is that we cook everything from scratch. For instance, if I was going to have a ketchup in my meal, I’ll use all the base ingredients to create that ketchup. So we don’t use other products to insert into our own. Everything is made in house.
Dr. Hotze: Okay, that’s good. Now, the reason I wanted to introduce Barry to you and Healthy Gourmet Your Way to each of you is because here at the Hotze Health & Wellness Center, we routinely start our new guests, and we call our patients guests, on a yeast-free eating program, which is a ketogenic eating program, or the old Adkins diet.
Basically, it consists of an elimination of all simple carbohydrates. That would be the pizza, pasta, bread, all grain products, cookies, cakes and sugar as well as sugar drinks. Any kind of soda water. So we eliminate that completely, and the reason we do that is because yeast in our system will grow on sugar, and remember, the simple carbohydrates, the grain products, the breads, pizza, pasta, cakes, cookies and all that are simple starches. And starches are simply sugar molecules that are hooked together so when you eat those immediately, you begin to digest those. You have enzymes that digest those and turn those into sugar, or glucose, which puts a sugar load in your body, which increases insulin, and if you eat a high carbohydrate diet consistently, you often times will develop what we call insulin resistance and you’ll have excess sugar floating in your blood, which is pre-diabetic, or diabetic. And the insulin drives that into fat cells, it wants to get rid of the sugar, it drives it into fat cells.A high carbohydrate diet will inevitably cause you to gain weight, and it also feeds the yeast, which we don’t want to do. So we want to make it easy for you to be able to be on a ketogenic eating program, or yeast-free eating program, and that’s why we are collaborating with Barry at Healthy Gourmet Your Way to be able to have prepared dishes for you so you don’t have to think about it.
The yeast-free eating program eliminates the carbs and sugars and we don’t like to call it a diet, it’s an eating program, or healthy eating lifestyle. You have to change the way you think about food so you don’t live to eat, you eat to live, is our philosophy. So what we recommend is good healthy fats in your eating program, and that would be eggs, that would be butter, that would be cheeses, that would be olive oil, fish oil, coconut oil, avocados, olives, nuts, all these good healthy oils are important because your body burns those much more slowly than it burns the simple carbohydrates.And then we have healthy green vegetables, very important. The Brussels sprouts, the kale, the broccoli, the spinach, among others. And then we minimize the amount of meat. We do want you, and encourage you to eat some meat, but you really don’t need more than a few ounces a day of meat. If you eat a lot of meat, your body will convert that into sugar. It’s called gluconeogenesis where the liver converts the protein into sugar molecules. So what we want you to do, and want your cells to do, is to burn ketones which are a byproduct of fat. So if you eliminate the sugars and the carbs, your body will begin to break down fat in the liver and you’ll have ketones and ketones burn very slow in the cells.
I like to say the difference between a ketogenic eating program and a high-carbohydrate eating program, simple carbohydrate, is the difference between burning newspaper in a fireplace, which burns up very quickly and you have to continue to throw newspaper on by the loads to keep the fire going, or else you can put logs on your fire, which burn more slowly. So the newspaper is like burning sugar. You get sugar highs, sugar lows, or you can burn fats which is ketones, which satisfy, which cause your stomach to secrete a hormone that tells the brain it’s satisfied, and it’s satisfied so you don’t have these hunger urges on a ketogenic eating program, and it’s a great way to lose weight. And it’s a great way to really feel healthy again.
Remember, the simple carbohydrates cause inflammatory products in your body which lead to inflammation of the coronary arteries and coronary artery disease as well as a host of other autoimmune diseases.
When you think about this eating program, some people get overwhelmed. It seems pretty straightforward to me, but in order to help you do that, we have collaborated with Barry and his firm Healthy Gourmet Your Way. Tell us how this works. I know in our vitamin store downstairs we’re recommending that, so tell us how your clients determine what food they’re going to have.
Barry Fourie: On our menu we have, on the right hand side, you can select different dietary categories, so whether it’s something as simple as just gluten-free, or going as involved as your yeast-free diet, as well, you can just click that tab and it will automatically eliminate anything that doesn’t fit that category.
Dr. Hotze: I got you.
Barry Fourie: We also have custom meals so if you do want to get creative and you really know what you’re doing, you can get on there and actually select your own ingredients and we build it for you and ship it to you, as well.
As far as the logistics go, there’s no minimum orders, you can order one meal from us if you just wanted to try us out. We try and make it really easy and accessible for anybody to order from us and it is shipped straight to your door.
Dr. Hotze: Well, how is it shipped? What do you have a courier service deliver it, or do you have UPS?
Barry Fourie: Right, so we use UPS, it comes next day, and it’s in a cardboard box that’s cold and will stay refrigerated and cold on your door, packed with ice packs with the meals. Interestingly, our insulated liners actually made out of old denim, so it’s really environmentally friendly, as well. I know a lot of people that order from us repeatedly don’t want to have a lot of trash on hand.
Dr. Hotze: Sure.
Barry Fourie: Which is our same opinion and philosophy so we try and make it as seamless and good for everybody as possible.
Dr. Hotze: So what is your website?

Barry Fourie: Right, yup, just simple check out.

Barry Fourie: Right, so right now our ketogenic tab would be the low-carb tab.
Dr. Hotze: Right.
Barry Fourie: And all the information will be there for you, so if you’re looking for a certain number of carbs, or net carbs per meal, it’s readily available right on the front, on the actually menu item, as well.
Dr. Hotze: Okay, tell me on your food when you ship it, is it shipped frozen, or is it,,,
Barry Fourie: It’s fresh.
Dr. Hotze: It’s fresh.
Barry Fourie: So, I did bring some just to show you guys. They’re all vacuum sealed, as well. It’s in a BPA free plastic packaging and they’re all ready to heat and eat, so you don’t need to cook anything past this.
Dr. Hotze: So what do we have here?
Barry Fourie: This is our Chicken Saffron. It’s a blend of different spices, tomatoes, chickpeas, and some chicken breast.
Dr. Hotze: Looks delicious. What else do we have here?
Barry Fourie: And we’ve also got, this is our Greek Turkey Fit Bowl. We’ve got with asparagus, it’s lean ground turkey with tomatoes and mint and a few different things. That’s one of my favorites, as well.We do have breakfast items as well. We love doing omelets.
Dr. Hotze: That looks like a delicious omelet.
Barry Fourie: Yeah, and another thing with this packaging, especially with us being shipped to your door instead of a conventional snap top plastic container, by the time that it arrives, it’s not going to be all jostled around…
Dr. Hotze: Right.
Barry Fourie: And it stays fresher for a lot longer. So we don’t freeze it, but it is freezer friendly, as well, if you do want to order in bulk from us and then keep some on hand. And the shelf life is a little bit better, as well, so you’ve got 10 days to consume our meals in the fridge.
Dr. Hotze: That’s tremendous.
Barry Fourie: Yeah.
Dr. Hotze: Okay, so this can be ordered if you purchase by what time will it be delivered the next day?
Barry Fourie: We cook our entire menu fresh every week, so we collect all the orders, source all the ingredients, cook it, and ship it. And if you order by 6:00 AM on a Tuesday, you’ll get your meals delivered on Thursday of that same week. And we do accommodate some late orders, as well, it just depends on what we have going on, but sometimes we just don’t even have the ingredients on hand because we source them all fresh.
Dr. Hotze: That’s great.
Barry Fourie: But if you get your order in by Tuesday 6:00 AM, you’ll get them by Thursday of that week.
