Yeast-Free Breakfast Doesn’t Have to be Boring
We’re kicking off Week three of Yeast-Free with Me! How’s everyone doing? We would love to hear about your progress up to this point. Have you lost a few pounds or inches? One area of the yeast-free eating program that seems to be giving participants trouble is breakfast ideas. Many Yeast-Free with Me Team members have had ,along with omelets and egg salad, eggs that are fried, scrambled, hardboiled, poached, sunny side up, and over easy. Next on the list is green eggs and ham.
So today we have a special treat for you – a recipe that puts a whole new spin on eggs…………….
Just kidding. We know that some of you have sworn off eggs for the rest of your life. We get it – you’re tired of eggs. Is a recipe that uses eggs OK with you?
What about a delicious cinnamon scone? I think this use of eggs will be to your liking!
Ingredients:
¼ cup unsweetened applesauce
¼ cup
4 egg whites
¼ cup , melted
½ tsp. salt
½ tsp. baking soda
2 tsp. cinnamon
3 shakes of allspice
½ tsp. nutmeg
2 ¾ cup almond flour
1 cup walnuts, chopped
Directions:
1. Preheat oven to 325 degrees.
2. Beat egg whites, applesauce, Sweet-N-Natural and coconut oil for about 1 minute.
3. Add salt, baking soda, cinnamon, allspice and nutmeg.
4. Stir in almond flour and walnuts to make a stiff dough.
5. Drop by large spoonfuls on a cookie sheet lined with parchment paper.
6. Flatten scone a little with spatula.
7. Sprinkle extra cinnamon and Sweet-N-Natural on top before baking.
8. Bake 18-20 minutes until browned, firm when a toothpick is inserted.
Makes about 36-40 scones. After you make your scones, wrap them up and carry them with you to your local Starbucks where with a nice cup of coffee (sans sugar or cream of course) it will feel just like old times.
Definitely beats green eggs and ham, right?
