My New Favorite Food Friday: Eggplant

Eggplant.  Favorite foods tend to be those that are delicious dressed up or simply prepared.  We love eggplant roasted, baked, or as baba ganoush!

Here is an easy recipe from Hotze Optimal Eating Cookbook for baba ganoush:

1 eggplant
2 tbsp. tahini
½ cup lemon juice
1 clove garlic
Pinch of salt

Preheat oven to 400 degrees F. Lightly grease a baking sheet.
Place eggplant on baking sheet, and make holes in the skin with a fork.  Roast for 30- 40 minutes, turning occasionally, or until soft.  Remove from oven, and place into a large bowl of cold water.  Remove from water and peel skin off.

Combine eggplant and additional ingredients in blender.  Blend until smooth.  Serve with vegetables or Terra Chips.
