Notes from Nurse Brandi: Lunch Ideas for Celiac Disease
I’m a mom to 3 boys myself. Now is a great time to make better choices than we did last year for our kiddos and ourselves. One way to make improvements is to pack a healthy lunch instead of letting them eat the garbage served at school. When did French fries, chicken nuggets, burgers and pizza get to be a good idea? It’s NOT! C’mon, let’s be intentional about how and what we allow our kids to eat.
Our bittiest Son, Will James, has Celiac disease. Celiac disease is a severe gluten intolerance that causes tremendous gastrointestinal problems. Celiac is what forced me to get serious about what I allow in my refrigerator and pantry.
Even though I’m one of Dr Hotze’s nurses, I felt overwhelmed when I learned of Will James’ diagnosis. I learned a lot from a book and cookbook named Practical Paleo by Diane Sanfillippo, BS, NC. The first 120 pages will explain it all and then the cookbook follows.
My all time, go-to, gluten-free Paleo cookbook is: Against All Grain by Danielle Walker.
Just so you know, these two cookbooks are Paleo. I selected a Paleo diet for our family because it is close to the yeast free diet, which is how we really should eat all of the time.
Did you know it is legal to spray wheat with Roundup just before it’s harvested, and then make mac and cheese, pizza and cereal with it? Did you know that back in the 80’s America started genetically modifying our grain crops and that’s why everybody is gluten intolerant now? It’s not good for us. Our genetically modified grain crops are killing us.
We have a resident gluten dynamo on staff here at the Hotze Health & Wellness Center, our physician’s assistant, Amber Littler, who is a gluten practitioner. If you are in need of superb gut healing then I suggest Colostrum Complete and Probitotic Blend.

It is good to know that there are others that are able to help us with Celiac information . My daughter was diagnosed about 5 years ago she is 19 now but we still have some difficulty getting her shin clear . If you can give us any advice for that please do, we are open to anything that could give her relief. And since she’s going to college at this time it would be greatly appreciated .
